Ingredients needed in order to make spicy pasta recipe:

  • For boiling of pasta for spicy pasta:
    ● 4 cups of water
    ● 1 tablespoon of salt
    ● 1 tablespoon of oil
    ● 1 cup of penne pasta

  • For making red sauce spicy pasta:
    ● 2 garlic cloves
    ● 1 small onion
    ● 2 tablespoons of olive oil
    ● ⅓ cup of tomato paste
    ● ¼ tablespoons of salt
    ● 2 tablespoons of chili flakes1 tablespoon of red chili powder
    ● ½ tablespoons of black pepper powder
    ● ½ tablespoons of oregano
    ● Reserved stock
    ● ½ cup of milk
    ● ½ cup of heavy cream
    ● 1 chicken cube

  • Making of pink sauce pasta:
    ● Boiled pasta
    ● ½ cup of cheddar cheese
    ● ½ cup of mozzarella cheese
    ● 1 tablespoon of unsalted butter
    ● Parsley or coriander leaves

  • making spicy pasta starts with boiling pasta:
    ● First step in order to make spicy pasta is to boil the pasta.
    ● For boiling, you need to take one pan and put it on the gas
    ● Take 4 cups of water in the pan for boiling the pasta because this is the first step
    ● In the second step you have to add 1 tablespoon of salt to the water
    ● Also add 1 tablespoon of oil in the water. You can use any vegetable oil you are using on a daily basis. I have taken olive oil in the recipe
    ● Add 1 cup of pasta to the mixture of water, oil, and salt. I have taken penne pasta but you can take any of the pasta because it does not matter which pasta you are using.
    ● Next step you have to do is take out ½ cup of pasta water for the sauce we are going to make next. Put the reserve’s water aside
    ● Let the pasta boil till 90% because the remaining 10% will be cooked when you mix it with the red spicy sauce.
    ● You have to check many times if it is cooked or not, if you feel like it is cooked 90% then you have to put the flame off and set that aside.
    ● Now with the help of a sieve, you have to drain the pasta and strain it properly. Also, you need to make sure that they do not stick with each other so you can just spread them in the sieve.

    ● Now the next step is to make the spicy red sauce. This step does not only include the spicy red sauce but it will also include the vegetables you have to use in the recipe.
    ● Take 2 cloves of garlic. Put a long and big knife on it and put pressure on the cloves. When you can see that the skin of the garlic cloves is broken, you can just remove it. Follow the same procedure with both of the garlic cloves.
    ● After that you need to chop it very finely to go into the oil.
    ● Take 1 small onion and remove the skin of the onion. Now you have to chop it finely but not small pieces, you just have to make it somewhat bigger than garlic cloves.
    ● Now take one pan and put it on the gas
    ● Add 2 tablespoons of olive oil to the pan. You can add any vegetable oil if you want.
    ● Firstly in the oil, add chopped garlic and you have to add the whole chopped garlic.
    ● After 1 minute of cooking chopped garlic, you have to add chopped onion to the pan. You have to cook the onion on low to medium flame until it is translucent.
    ● Once you feel like it is translucent, you have to add ⅓ cup of tomato paste. For making tomato paste, you need to take 4 to 5 medium-sized tomatoes and with the help of a knife, you just have to put the crisscross cut on the tomatoes and put it in the boiling water for blanching. After 1 minute of staying in the boiling water, you just have to take it out and peel off the skin. Add it in the blender and make a paste of it.
    ● You have to cook the tomato paste for 2 to 4 minutes.
    ● Add ¼ tablespoons of salt to the mixture
    ● Add 2 tablespoons of chili flakes to the paste
    ● 1 tablespoon of red chili powder
    ●  Add ½ tablespoon of black pepper powder
    ● Add ½ tablespoons of oregano
    ● After adding oregano and every spice, you just have to add the reserved stock or water which you took out from the boiling water. Add the reserved stock to the pan and make the paste smooth and thin.
    ● Cook the pasta for a minute and by looking at it, you must be feeling heat because it does look really spicy.
    ● Now you have to add ½ cup of milk to the paste and with milk, also add ½ cup of heavy cream to the mixture.
    ● I have added 1 chicken cube to the mixture for the taste. If you are vegetarian then you can totally skip it and if you are nonvegetarian and if you do not want to add it to the dish then also you can skip it.
    ● Give everything and a good mixture so that milk, heavy cream, and everything can mix with each other very well.
    ● Now the red spicy sauce is ready to go into the pasta.

    ● Now in the same pan of the spicy red sauce, you have to add the boiled pasta.
    ● Give the pasta and spicy red sauce a good mix and everything is set
    ● To make it cheesy, you can add ½ cup of cheddar cheese to the pasta.
    ● I have also added ½ cup of mozzarella cheese to the pan so that it not only looks cheesy but actually tastes as well.
    ● Add 1 tablespoon of unsalted butter to the mixture of the pasta and spicy red sauce
    ● You have to toss the pan so that all the cheese and butter can get mixed up with the pasta. Because if you use anything else for sauteing them the pasta will break. So you just have to toss it carefully or wait till the cheese and butter melts in the mixture.
    ● While doing all these things, you need to keep the flame low
    ● Cook all the mixture for 1 minute
    ● Turn the flame off and the spicy pasta is ready to eat.
    ● Serve it on the plate and add more grated cheese on top of it
    ● Also add pieces of coriander leaves, so that it tastes more delicious.

Notes

  • ● If you only want to make the pasta spicy then you do not have to add the sugar but if you want the mix flavors then you can add ½ tablespoon of sugar to the pan
  • ● While boiling pasta, it is necessary to take care of the pasta boiling only. It is 90% boiled. After that, you have to put the flame off.
  • ● You can add any other favorite vegetable of your choice.
